Delicious Healthy Beetroot Brownie
So delicious you'd never even know there is any beetroot inside! Shhhh!....Trick the hubby and the kids into eating more veggies!
2 Eggs Room Temperature
1 Tsp Vanilla extract
1/3 Cup Maple Syrup
1/8 Cup Coconut Oil
1/4 Cup organic cocoa powder
2 Tbsp Coconut flour
1 Cup Almond Flour (or substitute for other flour of your choice)
1 Tsp salt
Preheat Oven to 180 degrees
Wash and remove steams and heads of beetroot. Boil, stem or roast your beets which ever you prefer.
Using a square baking dish 8x8 or rectangle dish line the inside with baking paper and set aside.
Using a Blender or Food Processor place all ingredients included the cooled cooked beets inside and blitz til smooth and no lumpy bits.
Transfer batter to prepared baking dish.
Bake on 180 degrees for 20-25min until you can prick with a knife and not come out dirty.
Set aside too cool.
Dust with icing sugar, sea salt or shave some dark chocolate over the top.
Once cooled cut into small bite sized squares and keep in the fridge.
You can freeze any extra in a container or foil and it keeps well if you can't eat it all in one go ;)
