Healthy and Quick Banana Bread

Ever get a pile up of bananas that the kids don't end up finishing or forget they are in the fridge/fruit bowl and wind up throwing them out (but feel a bit guilty tossing them away)!

Stop! Don't! There are loads of things you can do with your left over bananas even if they're black on the outside! (even better for baking sweets).

Heres a quick, easy, healthy and delicious Banana bread for you and keep checking back for more handy recipes to lengthen your banana life.

Banana Bread  - 1, 2, 3 go!

 Quick and healthy banana bread recipe

You'll need:

1 Cup (or about 3-4 mashed bananas)

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 Teaspoon cinnamon 

1/2 Cup of Honey or Maple Syrup

2 eggs

1/3 Cup melted coconut oil or extra virgin olive oil (either works)

1/4 Cup Milk of choice 

1/2 Teaspoon Salt

1 3/4 Cups of Flour (I used white but wholemeal would work too)


What Next?

Line a tin with baking paper 

Preheat oven to 180 degrees

Using your choice of mixer; blend oil and honey til whisked together

Add eggs to wet then mix

Mix in banana mash, milk and vanilla essence then mix

Throw in salt, baking soda and cinnamon, whisk in.

Mix in flour slowly if using a mixer so doesn't fly back out at you (lol - learnt that the hard way a few times! ;))

Pour batter into the pre-lined baking tray.

Back for 55 min -Ta-Da!


This is delicious served as is, with a bit of butter, or even slice it and toast it later with a nub of butter on it - Cafe style at home. Nice!


Also, you can throw a lemon or cream cheese icing on it with a bit of coconut flakes too and its fab.







P.S > TIP: Check your honey or maple are 100% actual maple syrup or actual honey some brands substitute ingredients any brands you find on our site are the real deal.
