Yummy Spinach, Ricotta and Feta triangles
These goodies are perfect for using up any left overs hanging around in your fridge before your next box arrives.
This recipe is from one of our gorgeous customers Aysel who gave me a taste tester on one of our delivery runs! They were so delicious, I just had to share with you all.
Aysel suggested these will also work really well with Silverbeet, leak and potatoes too! So give it a go and mix it up based on what left overs you have available in your fridge.
1 bunch of fresh organic spinach (chopped)
1 Brown Onion (sliced)
2 garlic bulbs (crushed)
1 cup feta
1 cup ricotta
Chilli flakes (optional)
4 puff pastry sheets (thawed)
Tablespoon Olive Oil
Sesame seeds and poppy seeds
1 egg (whisked) for egg wash
Saute the onion, garlic and then briefly add the spinach til wilted. Put in a bowl to cool down.
Drain excess juice when cooled down and add the cheeses.
Cut puff pastry into 4 quadrants, to fold into 4 triangles.
Add the spinach and cheese mix into the centre and seal sides with a fork edge.
Egg wash brush the triangles and season with poppy and sesame seeds.
Oven bake for 20-25 minutes til golden at 180 degrees.
